Make your own delicious work of art with a hands-on wagashi sweet-making workshop led by Kayo Yoshitaya!
Wagashi, traditional Japanese sweets, are one of Japan's most cherished cultural arts and an essential part of Japanese tea culture. Through their delicate shapes and colors, they beautifully express the changing seasons and the natural world in miniature form.
The wagashi we will make during this workshop is called nerikiri, a type of jōnamagashi (high-grade fresh confectionery). These elegant sweets are traditionally served at tea gatherings and ceremonial occasions, making them some of the finest examples of Japanese confectionery art. Nerikiri designs often represent seasonal flowers, plants, and landscapes, reflecting Japan's appreciation for the beauty of each season.
This workshop will be led by Kayo Yoshitaya, who comes from Kanazawa, Japan, one of the country's most famous regions for traditional Japanese sweets. Kayo will introduce the culture and history of wagashi and demonstrate the techniques used to create nerikiri sweets.
This is the third time we have offered this wagashi-making experience. On this occasion, participants will also have the opportunity to observe how nerikiri bean paste is prepared and discover the difference between ordinary sweet bean paste and nerikiri paste.
After Kayo's demonstration, you will create your own wagashi in the shape of a ginkgo leaf, a beautiful symbol of autumn in Japan.
By learning these traditional techniques directly from Kayo, you will gain the skills needed to create a variety of artistic wagashi expressions in the future.
The ingredients used are white kidney beans, azuki beans, mochi, and sugar. The colors come entirely from natural ingredients such as matcha green tea powder and pumpkin.
Please note that the *Wagashi workshop is exclusively available as an add-on for guests participating in our Tea Ceremony.* To join the workshop, you must also be registered for the Tea Ceremony taking place on the same day at the same location.
